食材切配  /  Food washing


原材料、半成品、成品的容器分开使用,干货、瓜果蔬菜、肉类食品的清洗池分开使用,避免交叉污染。须一浸、二洗、三清、四进筐。蔬菜及肉类要经过严格检验,蔬菜去根、去老叶,肉类去皮毛。

The containers for raw materials, semi-finished products and finished products shal be used separately, and thecleaning tanks for dry goods, fruits and vegetables, and meat products shall beused separately to avoid crosscontamination.One dip, two washings, three cleanings and four baskets are required.Vegetables and meat should be strictly inspected.The roots and leaves of vegetables should be removed, and the fur of meat should beremoved.

食材切配按“丁配丁”、“丝配丝”、“片配片”的要求力求精细。切配过程严格执行“三检制度”(自检、互检、专检)。

The cutting and matching of food materials shall be in accordance with the requirements of "Ding Pai Ding " "siPai si" and "Piece Pai Pian".The "three inspection system"(self-inspection, mutual inspection and special inspection) shall be strictly implemented during the cutting and matching process.
